What does it actually mean when something uses more than 100% of the
CPU (as indicated by Activity Monitor?) On this old MBA here Mail seems
to be using around 120/130% - although I don't know what it's actually
doing while seemingly just sitting here!

On a multicore machine, >100% means more than one core is busy running a
particular process, typically because the program is running multiple
threads. Each 100% represents one core being occupied running that program.

Mail.app maintains its state in SQLite database(s), and seems to spend an
inordinate length of time furtling them, for unknown reasons.
