Hi:

I've recently given my old iMac Pro to Valentina, who has set it up with a
new volume on the hard drive where she has installed a fresh copy of the
System and all her personal stuff. But when the Mac boots, it also mounts the
old volumes on her desktop, which contain my files.

How best to stop the old volumes automounting? And although we don't really
need this, is there a way to stop her accessing them at all?

I’ve never tried it but a search revealed this discussion on that very
topic.

Having nothing better to do, I used DU to create a new apfs volume on my
Intel MBA running Monterey. Then I followed the instructions in the article referenced
above, and, yay, it worked! Easy peasy :)

A bit late now but why didn't you just create a second user account for her?

If you don't get any joy with answers then a last resort would be to
reinstall the whole HDD from a TM backup and start over by creating a
second account.

Because she wants to use the latest MacOS whereas the reason I have a second
(and third) volume is so that I can run Monterey and Mojave on the
(surprisingly frequent) occasions I need to.

Yep, seems to have worked for me, too.

The process is automated if you have a copy of (the excellent) Disk Jockey,
by Bombich, but a) I don't think it's in the public domain yet, and b) it
doesn't work on internal APFS volumes for some reason.
