When typing an iMessage under Sonoma, if I type a text smiley such as
":-)" it pops up a little thing that offers to replace it with a the
smiley face emoji and there is a little [x] to click in order to cancel
the change.

Is there a way to cancel the change from the keyboard[1] because
interrupting the flow of typing to cancel the thing is a pain?

Alternatively is there a "do not substitute emojis anywhere ever"
setting that I've missed?

[1] I know, I should just avoid typing the things!

Correct and a lot of people do not understand it the way you do it or
want it to do.

AFAIK it cannot be turned off or better: I never tried to turn it off so
I never checked.

Tapping Escape does it.
