It'd be handy for me to put some of my more useless calendars in tabs in the
Calendar app. How's it done?!

I've got the tab bar showing (View/), and the only calendar I've got in listed
(Window/) is 'Calendar'. I've got 10 colour coded calendar categories.

Doesn't look like you can, Calendar doesn't honour cmd-t to create a new
tab so it's a single-tab app. How dumb.
