I dug up some earlies this week to see how they were getting on (they were delicious). However they all show like this. It doesn't affect the taste but the head chef complains.

What is this ? Is it a problem? Is there an answer?

Looks like potato scab to me. It's unsightly, but the potatoes are, as
you've found, still edible. Lots of info at:
