I have an orchid that was flowering on 2 separate shoots. One shoot
finnished and all the flowers dropped, so I cut ifoff, disentangling it
from the other shoot. Cutting it up I then noticed that half way along
there was what appeared to be a small leaf like structure growing. What
is/was this? Too late now, but if I had seen it before I would probably
have left it to see.

I had that last year and left it on to see what happened. I thought it
might develop into another plant but after a few months it began to
wither and then the whole plant died. That's the first orchid death I've
ever had!

If the flower stalk is green then leave it alone, you might prune it
back a bit but it will reflower from the same stalk. Phals can grow
"kiekis' new plants grow on the flower stalk, you wait until they have
grown well, are fully formed little plants with good roots then cut
off and repot. One of mine if from that situation.
