A little overgrown pear against the fence , plenty of fruit but it has
developed a cankerous skin and is coming off the plant still a bit
crunchy and bitter although edible enough if peeled. Since the fruit is
not good enough for the fruit bowl I am wondering if I might make
Blackberry and Pear Jam instead of the normal B&Apple. Any reason not to?

Well, I would. But check the pectin - pears aren't as high as apples.
