I'm familiar with having to net cherries but this year something ate the plums before they were even ripe and the same with the pears We have two pear trees one is about 25 years old and the fruit on that were left untouched. The other pear tree is in a line of fruot trees. Cherry, Pear, Plum, Apple, Apple and Quince. The apple and quince were left untouched.
We do have a fox, pheasants, pigeons, badger (I think) and sparrow hawk in the locality. Someone said the fox could climb the plum tree ?
Any ideas?

It was drier and hotter this year so other food sources nearby may not
have done as well as usual. If larger birds are trying to take the fruit
but actually knocking them to the ground then any of the above (perhaps
not the sparrowhawk?) will help themselves. Back when we had a plum tree
I remember a squirrel struggling manfully to take the plums away along a
nearby electric cable, but that didn't happen any other year.

Yes we have resident squirells and I had thought of them. There was some mauled fruit on the ground around the apples and pears but not the plums.
Next year I'll rig up a camera and try and spot the culprits.
In previous years the only problem with the plums was wasps
