People in car allegedly caught with drugs at SA/WA vehicle border.

What would stop someone avoiding the border crossing, by driving a 4wd
and avoiding the border and driving off road, then rejoining the main
road some many kilometers further on?

They would still be crossing the border - the border is not just at roads.

It is not so easy. I worked on a geophysical survey in that area, and
there is pretty harsh ground; you would want 3 spare tyres I reckon.
A few tried during the COVID-19 border closure and were spotted.
