It also helps if you actually have unrestricted skill in the weapons you use against them.

For my part, hence: "legendary skills." Meaning, maxed out. Does not
matter if you attack them with Expert skill with a +7 artifact sword — with
their -40 AC. You can barely touch them. And yet they whack you when
you have -55 AC.

And the responses I get are "oh, those silly monsters!" "that's the way
monsters are for you!", etc., etc. . . .

I tend to keep increase accuracy rings around for occasions like these or use something along the lines of Grimtooth - you can also polymorph them if they don't have magic resistance, since most available polyforms will almost always have less AC.

As an additional (very late) answer, I also recommend footrice eggs or corpses - at worst, you can land a few choice hits and force them to use up vital utilities.
