ping will not work on onion sites. But you can gather info from a service on an onion site just like you can for a clearnet site. This includes:
-server software and version
-script languages installed
-directory discovery
-checking for known vulns
-....

Download kali, and start to play with the appropriate tools. Most of them will be able to use a proxy (which is then the tor socks proxy or something intermediate, like privoxy).
