guilty as they contain so much fat (of I presume the saturated sort)
which current views consider is bad for us, but it's _so_ delicious ...

Sorry to disappoint, but I think you'll find if you just chop your
slices (and black pud) into small cubes you have "bites".

I like them especially when they're sold with assorted flavourings -
maple, Chinese, BBQ, salt and herbs, etc.; but those (pork shoulder
steaks too) seem _mostly_ only to be sold in summer barbecue season.
(Yes, I know I could make the marinades myself. Life's too short - for
me, not for everyone.)

I thought that saturated fats were now reprieved? I know I eat plenty of
them – it's where the flavour is in meat after all, and whatever my
other blood tests show up my chololesterol levels remain stubbornly
normal. Indeed, is it not the high levels of sugars stuffed into
processed foods in an attempt to make up for their lack of flavour that
is truly damaging to health.

Bring back meat with a good marbling of fat, I say, like the
old-fashioned recipe books told you to look out for.

I hadn't thought of churros as a pud, just a breakfast thing, but very

Thank you, Vicky! I was sure I'd had churros before but couldn't think
where. Now I remember that I bought a breakfast cereal called that, not

I believe pork fat is considered ok, in fact probably good for you (in
moderation). Also, pork is much leaner than it used to be - to its
detriment, in my mind (taste).

I used to serve thinly sliced belly pork, coated in breadcrumbs and ground
coriander seeds and grilled. Like pork Epigrams, but without the pressing.
They cut it too thick for those now.

That is precisely the problem I have with it – the flavour had been bred
out of the meat.

cf Chicken. Lamb is slaughtered too early to develop good flavour and
you have to try very hard to find hoggett these days. With beef most of
the flavour now is achieved by aging (aka rotting".

I recently grilled some black pudding[1] but found it more or less
melted and fell apart.

[1] Not so the white pudding, which I actually prefer.
The black pudding was an M&S product. I shall not buy it again.
