At the age of nine, I arrived at my boarding school with my parents after
several hours and more of travelling by rail. My parents were immediately
taken off to meet the Headmaster and I was told I would see them later,
whilst ‘matron’ took me to see my dormitory and unpack my case. Within
minutes, my parents were told that they could now leave for home. “But we
wish to see our son again as we promised him!; Oh no, (said the Headmaster)
trust me, you leave now, it is the best way, I have done this many times
before!’ That particular head was sacked about a year later.

Were your fish & chips safe?
Whenever we eat F&C from "The Balancing Eel" (round the corner from the
Sloop Inn) we keep everything covered except briefly when actually
transferring food from container to mouth.

I suspect that regional differences might be involved here: in
Argentina they put all sorts of "bits" onto the parilla that wouldn't
even get a look in here. And all their cuts of meat are different too.

Here, any of the kidneys that I've bought have already been "cored" so
there are no funny tubes still attached and I chop off any remaining
gristly bits before cooking.

Hard to beat a name alluding to Lewis Carroll. Also a change from the
usual "Cod Almighty" or, more recently, "Frying Nemo".

I was in Glasgow for the day today as it happens, and also had a craving
for liver and onions. I know I could have gone to Morrison's but I
really didn't want pre-packed scraggy bits of liver, I wanted it sliced thinly
to order like I used to get it from the man on Barrow Market, and before
that from Vicar's in Reading. So I called in a Rodgers the butchers
on Byres Road. He does a good line in bits of cow aged in the high-tech
maturation cabinets, and also does a very fair mutton pie. I've never
tasted his ashet pies, I usually get those from either of the two
surviving butchers of Dunblane¹ (vaut le voyage from either direction).

Anyway, the upshot was that the butcher was very sorry but he doesn't do
liver. Nor heart, nor pig kidneys, nor lamb's fry, nor sweetbreads. He
says it's almost impossible to get hold of such things. Maybe it's a
Scottish thing – I'm not sure I've heard of offal in itself being a
Scottish meal in the way that mince and tatties is, although of course
the liver, heart and lungs of the sheep are an essential part of the
national dish. Maybe that's where all the lamb's livers and hearts go,
although that doesn't account for the lack of pigs' kidneys. I suspect
that there are vested interests keeping them off the market.

Anyway, thwarted in my quest for a cheap and tasty tea tonight, and
since I was in Byres Road anyway, I went to The Fish Plaice (yes, I
know, but it does claim to be on of the top 10 fishmongers in the UK)
for something interesting. It always used to feature a whole monkfish in
the centre of the display, perhaps to scare off potential thieves, but
not today. I ask for something that would do for one with the Jersey
Royals I picked up in Waitrose, that wasn't run-of-the mill (so no
mackerel or herring) and definitely not farmed. So I splashed out on a
wild brown trout. Not cheap, but it was excellent.

For me, the only edible animal (as opposed to bird) liver is lambs', and
very briefly fried.

My mother-in-law asked me once what I was planning for the evening meal.
I told her and she said very bluntly "Our Leslie doesn't like liver."
I didn't like to tell her that her son was very happy with the liver *I*
bought and the way *I* cooked it so I quickly changed the subject.

and in France, where they tend to cook the bits in their own fat till
meltingly (and presumably heart-cloggingly) delicious.

As I have remarked before, I worked for some time at what was
then GEC in Trafford Park. To the south west was Kellogs, so the
prevailing wind had an aroma rather like putting your head in a
cornflakes packet. To the north east were the Rubber Regeneration
Works. Whatever they did, it was pretty noxious. To the north
west was Turner's Asbestos. No aroma, I just hope their
filtration was up to scratch.
